The Lighter Side

A member of the Cowes Friendship Group brought these delicious onion bhajis for us to taste. They are easy to make so why don’t you try? Here is her recipe

Ingredients

  • 2 onions
  • 1 egg, beaten
  • 1½ cups chick pea flour (besan)
  • 1 green chilli, deseeded and finely chopped
  • ½ teaspoon ground cumin
  • 1 pinch of cayenne
  • ½ teaspoon of baking powder
  • Pinch of salt
  • 2 tablespoons of chopped fresh coriander
  • Cold water to mix
  • Vegetable oil heated to 350 deg f before adding food

Method

  1. Cut the onions in half and slice about ¼ inch thick.
  2. Beat together egg, chick pea flour and enough water to make a batter as thick as whipping cream.
  3. Beat in the spices, coriander, salt and baking powder and let it rest for 15 minutes.
  4. Stir the onions and chilli into the mixture and let it sit for another five minutes.
  5. Heat 1 inch of oil in a skillet on high heat. When the oil is hot enough drop a small mound of the mixture into the oil and press down slightly with a spatula. Fry on one side until crisp and brown and then turn over and cook other side.
  6. Remove when cooked and keep warm in the oven at 200 deg f.
  7. Serve with mango chutney. Serves 3 to 4
